INSTRUCTIONS
Preheat oven to 400F.
Peel and chop the beets and toss with honey, olive oil, thyme and season. Roast in an aluminum foil package until soft, about 20 minutes. Allow to cool once fork tender.
In a blender, add roasted beets, tofu, lemon zest and juice. Add water as needed to create the right consistency. Season to taste.
