INSTRUCTIONS
In a dry Skillet over medium heat, toast the pistachios and almonds until lightly browned. Transfer to a cutting board and let cool.
Add the fennel, cumin and coriander seeds to the same Skillet and toast until fragrant, about 1 to 2 minutes. Transfer to a bowl and let cool.
Add the sesame seeds to the same Skillet and toast until golden, about 3 minutes. Immediately transfer to a clean bowl.
Once the nuts are cool, coarsely chop with a Chef’s Knife and add to the bowl of sesame seeds.
Once the spices are cool, transfer to a Mill. Very coarsely grind the spices directly into the bowl of nuts and sesame seeds. Mix to combine. Season to taste with freshly ground salt and pepper.
Pour the mixture into a Ramekin. To serve, dip fresh bread into olive oil and then into the dukkah spice mix.
