INSTRUCTIONS
Grill eggplants on the barbeque or on a grill pan until blackened, soft and collapsing.
Place in a Stainless Steel bowl and cover with plastic wrap to steam for 10-15 minutes.
In a large bowl, combine all the other ingredients.
Once the eggplants have cooled, remove the charred skin and chop the flesh. Add to the bowl and mix well until combined.
