Walnut-Crusted Mahi Mahi With Pineapple Salsa

INSTRUCTIONS
Prepare the pineapple salsa by mixing all the salsa ingredients together in a bowl.
Using a food processor, pulse the walnuts until finely chopped.
Mix together the walnuts, panko breadcrumbs and salt and place on a large plate.
Pat the Mahi Mahi dry with paper towels, then lightly drizzle with 1 tbsp of vegetable oil.
Press the Mahi Mahi fillets into the breadcrumb mixture, pressing firmly on both sides to ensure the breadcrumbs stick to the fillets.
Heat the remaining oil in the Toughened Nonstick Pro Braiser on medium-high heat.
Cook the Mahi Mahi for about 2-3 minutes on each side until golden brown.
Serve immediately topped with the pineapple salsa.
