How to Truss a Chicken for Roasting
Trussing a chicken is the first step to a perfectly roasted chicken. Tying it in this way ensures that it cooks evenly and is beautiful to present at the table. First off cut a long piece of butcher twine enough to wrap around the chicken twice. Slide it underneath the back of the chicken and pull it around the top of the bird crossing the twine and wrapping it under each drumtick. Pull the string tight to hold them together, bring the remaining twine along the bottom half of the drumsticks tying it in a knot at the base of the neck.
