How to Mince
Mincing is a useful knife skill that involves finely breaking down an ingredient so that it can easily melt into a sauce, marinade, vinegrette or sauté. To mince a garlic clove, hold a Chef's Knife on its side over a fresh clove of garlic. Carefully press down on the knife with the palm of your hand to break the clove making the skin easy to remove. Slice the garlic clove lengthwise into strips then slice the strips crosswise to mince.
