INGREDIENTS

  • 2 tablespoons olive oil
  • 2 cloves of garlic, finely chopped
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 pounds extra lean ground beef
  • Salt & pepper, to taste
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 pinch cayenne pepper
  • 2 tablespoons tomato paste
  • 1 can kidney beans, rinsed
  • 1 can finely chopped tomatoes
  • 3 cups low sodium chicken stock
  • Grated cheddar, for serving
  • Sour cream, for serving

EQUIPMENT

INSTRUCTIONS

To a Braiser over medium heat add olive oil, garlic, onion & pepper. Cook until vegetables begin to soften, about 5 minutes.

Add the ground beef, salt, pepper chili powder cumin, smoked paprika, oregano & cayenne pepper. Once beef is cooked stir in the tomato paste, beans, tomatoes & chicken stock. Cover with lid, turn heat to low & cook for an hour to allow flavours to mend.

For a slightly thicker chili, remove the lid 15 minutes before serving. Garnish with cheese & sour cream.
