Basting is a technique for moistening the surface of roasting meat, poultry or other foods with pan drippings or other liquids such as stock or butter. To baste a roast, use a ball baster to retrieve pan juices then apply the drippings to the surface of the roast. This can also be done with a spoon and repeated several times during the cooking process. To baste a steak, after turning it over, add butter to the pan and tilt the pan towards you. Use a spoon to scoop the butter and spread it over the meat continuously until finished cooking.
