INSTRUCTIONS

Preheat oven to 200°C / 400°F and place rack in centre position.

Clean the dried mushrooms with a clean cloth, then gently remove the stems to create a cavity.

Place the mushroom caps close together directly in the Oval Au Gratin Dish.

For the goat cheese and honey version

In a bowl, mix the goat cheese with half the honey and half the walnuts.

Fill each cavity generously with the cheese mixture.

Sprinkle with the remaining chopped walnuts and fresh thyme.

Drizzle a little honey over each mushroom.

For the “Rockefeller” version

In a skillet over medium-low heat, sauté the spinach in a drizzle of oil. Season the spinach, then squeeze well in a colander to remove all the excess water.

Coarsely chop the spinach and place a teaspoonful inside each mushroom.

In a bowl, mix the softened butter with the garlic and parsley, then spread a layer of this butter over the spinach.

Generously sprinkle each mushroom with breadcrumbs, then place the stuffed mushrooms in an Oval Au Gratin Dish.

Put the Oval Au Gratin Dishes in the oven for 18 to 22 minutes. The mushrooms should be tender, and the filling should be nicely browned or topped with a crust.

Remove from the oven and place the dishes directly on the table, with small cocktail picks available for guests to use.
