  • 1 Tbsp (15ml) olive oil
  • 1 clove garlic, sliced
  • 1” (2.5cm) ginger, chopped
  • 1 shallot, sliced
  • 1 cup (250ml) fish stock
  • ¼ cup (60ml) white wine
  • 2 bok choy, cut in half
  • ¼ cup (60ml) fennel, finely chopped
  • 1 red snapper, filets only, cut into portions
  • 1 grapefruit, sliced
  • 1 green onion, sliced
  • Salt to taste

Here are all the ingredients you need and the steps to follow to tackle this recipe.

INGREDIENTS

  • 1 Tbsp (15ml) olive oil

INSTRUCTIONS

In a non- stick pan, heat olive oil over medium high heat. Add garlic, ginger and shallot, cook for 1-2 minutes.

Add fish stock and white, simmer for 5-7 minutes. Add bok choy and fennel, cook for another 3-5 minutes.

Season snapper and add to broth for 5-7 minutes until cooked through.

Add grapefruit and green onions, toss and serve immediately.
