INSTRUCTIONS
In a Saucier, bring the water and sugar to a boil just until the sugar has dissolved. Remove from the heat and let cool. Transfer to a Classic Pitcher and stir in the lime juice. Refrigerate until ready to serve.
When ready to serve, add the vodka to the pitcher and stir well. Divide the mixture evenly among a set of four Set of 4 Champagne Flutes. Top off each glass with the ginger ale and Champagne. Garnish the cocktails with the lime zest and mint.
Use your Oval Dutch Oven or Holly Chef's Oven filled with iced to keep your drinks cool.

Notes
This recipe doubles easily if you are hosting a crowd.
For a less sweet variation, mix or replace the ginger ale with sparkling water or soda water.
