Decadent Grilled Cheese

INGREDIENTS

  • 8 slices bacon or 12 slices salami
  • 1 large apple or pear, cored and sliced into about 24 thin wedges
  • 2 tbsp brown sugar
  • 8 thick slices brioche bread
  • Mayonnaise, to taste
  • ¼ cup Dijon mustard
  • ½ cup onion jam or caramelized onions
  • ¼ lb smoked cheddar or other smoked cheese of your choice, thinly sliced
  • ¼ lb blue cheese or brie cheese, crumbled or sliced
  • Chopped chives, to taste (optional)

INSTRUCTIONS

Preheat a Square Skillet Grill over medium heat. Cook the bacon, in batches as needed, until crispy, about 6 to 8 minutes. Set aside on a plate lined with paper towels. Remove any excess bacon fat from the skillet and return it to medium-low heat.

On another plate, coat the apple slices with the brown sugar on both sides. Add to the skillet and cook until nicely caramelized on both sides, about 5 minutes. Set aside on the same plate. Wash and dry out the skillet. Preheat over medium heat.

Lay out the bread slices on a work surface. Cover each slice with mayonnaise, then flip the bread over. Cover the inside of the bread with the Dijon, then the onion jam.

Top half of the bread slices with half of the cheddar and blue cheese. Add the bacon and apple slices. Top with the remaining cheese. Close with the remaining bread slices, onion jam side down.

Grill the sandwiches, in batches as needed, until nicely browned on both sides and the cheese has melted. If the bread is browning too much before the cheese has melted, reduce the heat to medium-low. Push down gently on the sandwiches with a Revolution® Slotted Turner as they cook.

Remove the sandwiches from the skillet and cut in halves or quarters. Sprinkle with chives. Serve immediately.

Note

This recipe doubles easily if you are feeding a crowd. Feel free to use any combination of cheeses you have on hand.
