Who knew a crêpe-making pan could bring such joy? Create the thinnest crêpe with just the right amount of crisp and watch each guest smile as it slides onto their plate.
Basic Crêpe Recipe
Ingredients
- 1 cups (250 ml) unbleached all-purpose flour
- 4.5 tsp (22.5 ml) icing sugar
- ¼ tsp (1.25 ml) salt
- 2 eggs
- 1 cups (250 ml) milk
- ¼ cup (62.5 ml) water
- 1.5 tbsp (22.5 ml) unsalted butter, melted and cooled, plus more for cooking
Instructions
In a large bowl, whisk together the flour, sugar and salt. In another bowl, whisk together the eggs, milk, water and butter until combined. Pour over the dry ingredients, whisking until smooth. Cover and refrigerate for 1 hour or preferably overnight. Whisk well before using.
Heat the Toughened Nonstick Pro Crêpe Pan over medium-low heat; brush lightly with melted butter. For each crêpe, pour ¼ cup (60 ml) of the batter into the centre of the Pan, swirling the Pan to form crêpes about 9 inches in diameter (or use the rateau to help spread the batter). Cook, turning once, until golden, about 2 to 3 minutes. Transfer to a cooling rack and cover with a clean dishcloth. Repeat with the remaining batter. Wipe out the Crêpe Pan. Recipe makes about 10-12 crêpes.
