Banana Chocolate Chip Walnut Baked Oatmeal

INGREDIENTS

  • 4 large overripe bananas (approx: 2 cups, mashed)
  • 4 eggs
  • 3 cups milk
  • 4 tbsp butter, melted and cooled
  • 2 tsp vanilla extract
  • 5 cups oats (rolled oats or quick oats) 
  • ⅓ cup brown sugar 
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 cup dark chocolate chips
  • ½ cup chopped walnuts

INSTRUCTIONS

Preheat the oven to 350 degrees F. 

Peel the bananas, add them to a bowl and mash them with a fork. 

In a large mixing bowl, whisk the eggs, then add the almond milk, mashed bananas, melted butter and vanilla extract. Mix together to combine. 

Next add the oats, brown sugar, baking powder, salt, cinnamon, chocolate chips and walnuts and mix until everything is combined.

 Pour the mixture into your Rice Pot and bake for 50-60 minutes. 

Let cool on the countertop for 5 minutes before serving.
