Warm Cheese Dip with Spinach, Kale and Artichokes

INGREDIENTS

  • 1 onion, diced
  • 2 tbsp (30 ml) olive oil
  • 2 garlic cloves, finely chopped
  • 4 cups (1 litre) kale leaves, stems removed, leaves finely chopped
  • 4 cups (1 litre) fresh spinach, chopped
  • 1 package (250 g) cream cheese, cubed and softened
  • 1 small ball (125 g) fresh mozzarella cheese, drained and diced
  • ¾ cup (180 ml) feta cheese, crumbled
  • ¾ cup (180 ml) sour cream
  • A few pinches cayenne pepper, to taste
  • 1 jar (170 ml) marinated artichoke hearts, drained and chopped
  • ½ cup (125 ml) finely grated Parmesan cheese

INSTRUCTIONS

Preheat the oven to 400°F (200°C).

In a Toughened Nonstick Pro Sauté Pan over medium-high heat, cook the onion in the oil for 4 minutes or until golden. Add the garlic and cook for 1 minute. Add the kale and spinach. Cover with the lid. Cook over medium heat, stirring occasionally, for 2 to 3 minutes or until softened. Season with salt and pepper.

Transfer to a sieve set over a bowl and let cool for 10 minutes, pressing down with the back of a Revolution® Ladle to extract as much liquid as possible.

Meanwhile, in a large bowl, beat the cream cheese until smooth. Stir in the mozzarella, feta and sour cream. Season with cayenne to taste.

Add the spinach mixture and artichokes to the bowl of cheese. Mix to combine. Adjust the seasoning.

Spread the mixture out in a Saucier and cover with the Parmesan. Bake in the oven for 20 minutes. Turn on the broiler and cook a few minutes longer, until the top is golden.

Serve warm with a selection of bread and crackers.
