How to Brown Butter
Brown butter or beurre noisette is butter that's been gently cooked and caramelized resulting in a nutty flavour. Perfect as a sauce or to add to both sweet and savoury recipes, it is very easy to make. Add butter to a saucepan placed on medium heat. The Le Creuset enamelled cast iron Saucier Pan is the perfect vessel as it holds a consistent temperature needed to gently transform the butter as it melts. Stir the butter occasionally with a Le Creuset spatula. The butter will gently bubble gently as the water cooks off and the milk solids caramelize, imparting a golden colour and a nutty flavour. Once you can smell that nuttiness and the butter is a deep golden brown, remove the pan from the heat and transfer the butter including the caramelized milk solids to a heat proof bowl.
