INSTRUCTIONS
Preheat the oven to 250°F (120°C).
In a 30 cm Iron Handle Skillet, melt the butter over medium heat. Add the pumpkin seeds and nuts. Toast, stirring often, for 5 minutes. Add the sugar, cinnamon and cayenne. Cook for 2 minutes while stirring.
Add the maple syrup to the Skillet and simmer, stirring occasionally, until most of the liquid has evaporated, about 4 minutes. Sprinkle with the salt. Smooth out into an even layer.
Transfer to the oven and bake for 20 minutes, stirring once halfway through, until the mixture is nicely browned. Adjust the seasoning.
Serve in a 300 ml Pumpkin Casserole.
