INSTRUCTIONS
Preheat the oven to 350°F (180°C). Butter 4 Mini Oval Au Gratin Dishes.
In a bowl set over a double-boiler, or in a microwave, gently melt the dark chocolate and butter. Remove from the heat and let cool for 5 minutes.
Meanwhile, in another bowl, combine the graham crumbs, cocoa powder and salt.
Whisk the brown sugar into the cooled chocolate mixture for 1 minute. Whisk in the egg until thoroughly combined. Add the dry ingredients and mix with a Spatula just until the dry ingredients are moistened.
Divide the brownie batter among the Au Gratin Dishes and smooth out in an even layer. Sprinkle with the milk chocolate. Bake on the centre rack of the oven for 25 minutes or until a toothpick inserted in the centre of a brownie comes out almost clean.
Remove from the oven and let sit for 5 minutes. Place the oven rack in the top third of the oven and set to broil.
Arrange the marshmallow halves, cut side down, over the brownies. Return to the top rack of the oven and broil until the marshmallows are nicely toasted (keep an eye on them so that they don’t burn).
Cut each brownie into 4 pieces. Serve sandwiched between two graham crackers.
Note
The brownies can be baked in advance and stored in the Au Gratin Dishes In this case, cover the cooled brownies tightly in plastic wrap. The marshmallows can be roasted over an open fire and added to the brownies at the last minute.
