INSTRUCTIONS
Preheat oven to 400°F.
Place the leg of lamb in an Oval French Oven and cover with oil. Season well with salt and pepper. Roast for 45 minutes – 1 hour (depending on the size) with the lid on.
Remove the lamb from the oven and add the remaining ingredients to the casserole. Season well and return to the oven, turning the temperature down to 350°F and roast for a further 1 hour- 1 hour 30 minutes (depending on the size of the leg).
Serve hot.
