INSTRUCTIONS
In a stainless steel Essential Pan, cook the couscous according to the package instructions.
Gently fluff the cooked couscous with a fork.
In a large bowl add the chopped fruit, almonds and parsley to the couscous.
In a separate small bowl, whisk together the shallots, Dijon mustard, orange juice, maple syrup, and a few pinches of salt and freshly ground black pepper.
Gradually add the olive oil and add more salt and pepper to taste.
Pour the liquid mixture over the couscous and combine to serve. Can be served warm or cold.
