  • 4 cups vegetable broth
  • 200g spinach
  • 200g shelled fresh peas or frozen peas, defrosted
  • Small bunch mint
  • Small bunch parsley
  • 1 cup 35% cream
  • ¼ cup crème fraîche
  • Salt and pepper, to taste

INSTRUCTIONS

Heat butter over medium heat until melted. Add the green onions and garlic and cook until tender, about 3 to 5 minutes.

Add the potato and broth and bring to a simmer. Cook until the potato is tender.

Add the spinach, peas and fresh herbs. Simmer for 5 minutes. Blend until smooth.

Whisk in the cream and crème fraîche. Season with salt and pepper to taste. Top with croutons, pea shoots and freshly cracked pepper.
