  • 1 zucchini, chopped
  • 1 tbsp (15ml) lemon zest, finely grated
  • 1- 12oz (340g) salmon fillet

INGREDIENTS

  • 2 Tbsp (30ml) olive oil

  • 1 zucchini, chopped
  • 1 tbsp (15ml) lemon zest, finely grated
  • 1- 12oz (340g) salmon fillet
  • to taste salt and pepper

INSTRUCTIONS

Heat 1 Tbsp (15ml) oil in a frying pan over medium heat. Add onion; cook 5 minutes, stirring occasionally. Add zucchini; cook 2-4 minutes. Season with salt and pepper. Add lemon zest, toss and set vegetable mixture aside.

Using the same frying pan, add remaining oil and heat over medium- igh heat. Press salmon fillets between paper towel to dry surfaces thoroughly. Season on all sides with salt and pepper. 

Reduce heat to medium-low, then add a salmon fillet, skin side down. Cook for 7-9 minutes. Using spatula, flip salmon fillet and cook on second side for 25 seconds. 

Flip fillet again and top with red onion and zucchini. Serve immediately.
