Oven-roasted Feta with Figs and Olives

INGREDIENTS

  • 2 blocks of feta cheese, 200 g each
  • 10 to 12 Black Mission figs, stemmed and quartered
  • 1 cup Castelvetrano green olives
  • ¼ cup olive oil
  • 1 tbsp. honey
  • Zest of one lemon
  • 1 tbsp. fresh tarragon
  • Ground pepper, to taste
  • Crackers or fresh bread, to serve

INSTRUCTIONS

Preheat oven to 350°F and place rack in centre.

In the Everyday Pan, place the blocks of feta cheese, then scatter the olives and figs.

Drizzle with oil and honey, then sprinkle with lemon zest and fresh tarragon. Season with pepper.

Bake for 30 minutes, then finish with the oven’s broil function so that everything is lightly toasted.

Remove from oven and let cool before serving with crackers or fresh bread.
