Cookie

  • ½ cup (125 ml) salted butter
  • 1 cup (250 ml) brown sugar, packed
  • 1 tsp (5 ml) vanilla extract
  • 1 egg, lightly beaten
  • 1 ¼ cups (315 ml) all-purpose flour
  • 1 cup (250 ml) quick cooking oats
  • ¼ cup (60 ml) sweetened shredded coconut
  • ½ tsp (2.5 ml) baking soda
  • ½ tsp (2.5 ml) salt
  • ½ tsp (2.5 ml) cinnamon
  • A pinch ground nutmeg
  • 1 cup (250 ml) mix of fresh blueberries and raspberries, washed and dried

Toppings

  • Plain Greek yogurt
  • Mixed fresh berries
  • ¼ cup (60 ml) maple syrup, warmed with a pinch of cinnamon and nutmeg

INSTRUCTIONS

Preheat the oven to 375˚F (190˚C).
In the Toughened Nonstick Braiser, heat the butter until fragrant and starting to brown. Add the brown sugar and vanilla and stir to combine.
Transfer to a large mixing bowl and let cool slightly, no longer than 10 minutes.
Stir in the beaten egg and then the remaining dry ingredients. Fold in the berries.
Transfer the mixture back into the braiser and gently press down into an even layer.
Bake for 30 minutes, or until browned around the edges but still soft at the centre. Let sit until slightly cooled.
Top with a dollop of Greek yogurt, a handful of mixed fresh berries and the warmed maple syrup. Serve immediately.
