Is there anything better than indulging in a fresh sorbet on a warm summer day? We didn’t think so. Our Mixed Berry Sorbet incorporates a range of fresh berries, featuring a combination of blueberries, strawberries, raspberries, and whatever else you might have that’s in season.
While this recipe calls for an ice cream churner, you can nonetheless mix the ingredients as per the instructions below and freeze them in a metal pan. A metal pan is ultimately the best way to help the sorbet set quickly. Once completely frozen, be sure to have your espresso cups handy for a fun presentation.

This recipe takes about two hours to prepare, including the time it takes to set in the freezer, serving between four and six delicious servings of sorbet. INSTRUCTIONS
Stir the caster sugar, glucose, golden syrup and water together in a Stainless Steel Saucepan.
Cook over medium heat until small bubbles appear. This should take about 5 minutes.
Pour the mixture into a bowl and allow to cool.
Add puréed mixed berries and the juice of ½ lemon (strain before churning), then churn in an ice cream machine until smooth and frozen.
Divide the mixture between dishes. Place in the freezer until ready to serve.
Serve in Espresso Cups.
