Melt-In-The-Mouth Beef Ribs Braised In Red Wine

INGREDIENTS

  • 8 to 10 beef ribs (approx. 2.5 kg), cut into 3 x 4 in pieces
  • Salt and pepper to taste
  • A drizzle of olive oil, for cooking
  • 1 cup red wine
  • 2 yellow onions, coarsely diced
  • 2 stalks celery, sliced
  • 3 cups carrots, peeled and sliced
  • 4 garlic cloves, minced
  • 3 tbsp tomato paste
  • 2 cups tomato coulis or marinara sauce
  • 3 cups beef broth
  • 4 to 6 sprigs fresh thyme
  • 3 to 4 sprigs fresh rosemary
  • 2 bay leaves

For the gremolata

  • ⅓ cup fresh Italian parsley, finely chopped
  • Zest of one lemon
  • 2 tbsp olive oil
  • 1 tsp fleur de sel

  • 2 cups tomato coulis or marinara sauce
  • 3 cups beef broth

For the gremolata

  • ⅓ cup fresh Italian parsley, finely chopped
  • Zest of one lemon
  • 2 tbsp olive oil
  • 1 tsp fleur de sel

INSTRUCTIONS

Preheat the oven to 160°C / 325°F and place the rack in the centre.

Season the ribs generously with salt and pepper.

Heat a drizzle of oil in a 30-cm Iron Handle Skillet over medium heat. Sear the meat on all sides until nicely coloured.

Degrease the pan, then deglaze with half the red wine. Scrape the bottom well with a wooden spoon, then pour into the Rectangular Roaster.

Drizzle with oil and sauté the onions, celery, carrots and garlic in a Stainless Steel Sauté Pan over medium heat. Cook for 4 to 5 minutes, until tender and golden.

Add the tomato paste and cook for 1 to 2 minutes, stirring. Stir in the remaining red wine, tomato coulis, stock and herbs. Bring to a boil, then pour over the beef ribs in the Rectangular Roaster, taking care to place the vegetables and herbs between the beef ribs.

Cover the Rectangular Roaster with aluminum foil and bake for 3 hours.

Remove the aluminum foil and continue cooking, uncovered, for 30 to 45 minutes, or until the meat is tender and pulls away easily from the bones.

Meanwhile, in a small bowl, mix all the ingredients for the gremolata. Sprinkle over the beef ribs just before serving.
