These Lavender Roasted Pears make for an elevated fruit dessert that highlights the versatility of this delicate fruit. Contrasting the tanginess of the pears with the sweetness of the honey, this dessert offers the perfect ending to any meal or any occasion.
Our Rectangular Casserole is the perfect piece of bakeware to roast the pears until they are just soft. It is designed to lock in heat and moisture, allowing the pears to tenderize without getting mushy. Alternatively, an Enamelled Cast Iron Rectangular Roaster can be used. Make sure to have a Paring Knife on hand to prepare this recipe for easy peeling, halving, and coring of the pears prior to roasting.
Our Lavender Roasted Pears take just under an hour to prepare from start to finish, providing up to 10 servings at a time. For smaller or larger groups, adjust the ingredients accordingly and enjoy! Here are the ingredients you need along with four easy-to-follow steps to make this recipe yourself.
INSTRUCTIONS
Preheat oven to 425 F. Butter the inside of a Rectangular Casserole. In a food processor or spice grinder, combine sugar and lavender.
Peel, halve and core the pears, then toss with 3 tablespoons of the lavender sugar. Lay the pears cut side down in the casserole. Cover with lid and bake 20-30 minutes until just barely soft. Remove from the oven and remove the lid.
Preheat the broiler. Turn the pears cut side up and sprinkle each pear with 1/2 teaspoon lavender sugar. Place 6 inches under the broiler and cook until caramelized, about 4 to 5 minutes.
Serve pear halves with fresh raspberries and crème fraiche, and drizzle with honey. Sprinkle with fleur de sel if desired.
