Chilled Sesame Soba Noodle Salad

INGREDIENTS

Dressing

  • ¾ cup mayonnaise
  • 3 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp brown sugar
  • 1 tbsp chopped ginger
  • 1 ½ tsp onion powder
  • 2 garlic cloves, chopped
  • 2 green onions, white parts chopped, green parts julienned and set aside

Salad

  • ¾ lb soba noodles
  • 3 Lebanese cucumbers, thinly sliced into rounds
  • 2 corn cobs, shucked and kernels removed
  • 1 large carrot, peeled and julienned
  • 1 bunch radishes, thinly sliced into rounds
  • 3 cups red cabbage, thinly sliced
  • 1 cup snow peas, trimmed and julienned
  • 2 tbsp black and white sesame seeds
  • ¼ cup cilantro leaves
  • ¼ cup mint leaves
  • 1 large nori sheet, crumbled (optional)

Create a delicate fusion of flavour and texture by whipping up a soba noodle salad. Served chilled in our Oval Dutch Oven, this crowdpleasing dish is perfectly suited for the summer months. Open sesame!

  • 1 cup snow peas, trimmed and julienned
  • 2 tbsp black and white sesame seeds
  • ¼ cup cilantro leaves
  • ¼ cup mint leaves
  • 1 large nori sheet, crumbled (optional)

INSTRUCTIONS

Dressing

In a blender, combine all of the ingredients, except for the julienned green onions, until smooth. Season with salt and pepper. Transfer to a large bowl.

Salad

In a 4.7 L Oval Dutch Oven filled with salted boiling water, cook the soba noodles until al dente, about 4 minutes. Drain and run under cold water to prevent from sticking. Drain well. Clean the Dutch Oven.

Meanwhile, add the cucumbers, corn kernels, carrot, radishes, cabbage, snow peas, julienned green onions and sesame seeds to the bowl of dressing. Toss with Revolution® Tongs until well combined. Season with salt and pepper.

Add the soba noodles to the bowl of vegetables. Toss to coat well in the dressing. Adjust the seasoning. Transfer the salad to the clean Dutch Oven. Cover and refrigerate until ready to serve.

When ready to serve, remove the lid from the Dutch Oven. Garnish the salad with the fresh herbs and nori.
