Chilaquiles with Salsa Rojo & Salsa Verde

INGREDIENTS

  • 4-5 cups corn tortilla chips
  • 2 tbsp. vegetable oil

Topping

  • Queso fresco (cotija), crumbled
  • Crema fresca or sour cream
  • White or red onion, finely chopped
  • Fresh cilantro, chopped
  • Hot peppers, minced (optional)
  • Fried egg (optional)

Salsa rojo (makes 2 cups of salsa)

  • 4 tomatoes, chopped
  • 1 tbsp. chipotle peppers in adobo sauce
  • 2 green onions, cut into chunks
  • 1 clove garlic, peeled
  • ½ tsp. salt
  • ¼ tsp. cumin powder

Salsa verde (makes 2 cups of salsa)

  • 1 can (820 ml) whole tomatillos, drained
  • 1 jalapeño, stemmed and seeded
  • 2 green onions, cut into chunks
  • 2 garlic cloves, peeled
  • ½ cup cilantro
  • Juice of half a lime
  • ½ tsp. salt

INSTRUCTIONS

Place all the ingredients for the salsa of your choice in a food processor and grind to obtain a salsa-like texture. Adjust seasoning if necessary, then set aside.

Heat the oil in an Iron Handle Skillet over medium heat. Add the salsa of your choice and sauté for 3 to 4 minutes.

Stir in tortilla chips, then mix well with a Revolution® Spatula Spoon to coat each chip with salsa.

Top with a little queso, crema, onion, cilantro, hot pepper and a fried egg to serve.
