Making Fresh Pasta Dough
Fresh pasta boasts a delicate, silky consistency that results in a tender bite and a rich flavour profile. The use of simple, high-quality ingredients like semolina flour and farm-fresh eggs allows for a more nuanced taste that complements various sauces and toppings.

How to Knead Dough
Once the dough has formed a shaggy ball, transfer on to the counter and use your hands to bring the dough together.
With a pushing motion, use the heal of your hand to work the dough until the dough becomes less sticky.
Between kneading, stretch and fold the dough on to itself. Repeat this motion for approximately 10 minutes, until a smooth, homogenous ball forms.
To test whether your dough is properly kneaded, perform the Poke Test: Give your dough ball a firm poke with your finger. If the dimple starts to fill back quickly, the dough is ready. If the dimple stays, keep kneading and perform the Poke Test again after a few more minutes.
