How to Infuse Oil
STEP 1: PREP
The first step to your infusion is prepping the flavouring ingredients. Bruise your herbs to release their flavours and aromas. A Mortar & Pestle is great for this. Smashing your garlic with the heal of your Chef’s Knife also helps awaken its flavours. And of course, don’t forget to finely chop alliums and other fresh ingredients like chili peppers to make the infusing process most effective.
STEP 2: HEAT
Heat a high-quality olive oil gently over low heat in a Stainless Steel Saucepan. You don't want the oil to get too hot; just warm enough to help the infusion process. Then, add your flavourings to the oil. Stir the mixture, cover, and let steep for a period of time. The duration may vary from one to five hours. The infusion is done when the oil takes on the colour and scent of the herbs and spices added.
STEP 3: STORE
Remove the infused oil from the heat and let stand until completely cooled. Using Revolution® Wire Skimmer, strain the flavouring ingredients from the oil. Finally, pour the infused oil into an Olive Branch Oil Cruet. Store in a cool, dark, dry place for up to 6 months. Enjoy!
