Canning

Canning is a process that allows food to be preserved, extending its shelf life. Examples of canned foods include homemade pickles, relishes or jams. To ensure food is properly canned, jars must be boiled after they are filled. This will create a tight seal on the lid and produce longer-lasting preserves.

The 11.4 L Enamel on Steel Stockpot is the perfect tool for boiling jars. It is big enough to hold many jars fully submerged and can quickly bring water to a boil. Once the jars have returned to room temperature, it is important to check the seals by pressing down on the center of each lid. If the lid doesn’t make noise and can’t be pushed down, the jars are nicely sealed.

Sauces

The Le Creuset Enamel on Steel Stockpot is the ideal vessel for big-batch sauce preparation. Its tight-fitting lid limits evaporation allowing flavours to gradually infuse the dish. The large capacity of this stockpot also makes it perfect for making large batches of sauce, chili or ketchup which come in handy later in the year, during the holidays or when hosting a big group.

Making sauces from seasonal ingredients is a great way to immortalize the season’s flavours and enjoy them all year. Make sure to check out our Fresh Tomato and Basil Sauce recipe below!

Jams Jams

Jams

Making jam, jelly or marmelade is a classic way to preserve all kinds of fruit, such as berries, stone fruit and citrus. The Enamel on Steel Stockpot is perfect for a particularly fruitful harvest. Make a large batch of flavourful jam and keep in big jars to be eaten immediately or store in smaller jars to be gifted throughout the year.

Jam is also surprisingly easy to make. Simply combine 1 part lemon juice, 4 parts sugar and 8 parts fruit (halved or quartered) and let simmer over medium-low until thickened. You can even get creative and add saffron, ginger or cinnamon to timeless flavours. Make sure your jars are sealed well to gift later!
