About the Tagine
The Tagine is the traditional cooking vessel used in North African cuisine, and is ideal for tenderizing lamb, beef, and other tough cuts of meat.

Using a Tagine
STEP 1: AT THE BASE
Layer vegetables like onions and carrots with olive oil in the enamelled cast iron base. This will prevent your meat from sticking and burning and provides an aromatic cushion for other ingredients as they stew.
STEP 2: YOUR CHOICE OF PROTEIN
Choose between traditional lamb or chicken, or opt for more unconventional white-fleshed fish (like sole or mackerel) that pairs perfectly with the spices in a typical tagine.
STEP 3: SEASON, SEASON, SEASON
Spices are arguably the most important part of a traditional tagine. To achieve the flavours of Morocco, incorporate spices like cumin, turmeric, paprika, cardamom and coriander into your tagine.
STEP 4: LET IT STEW
Use medium-low heat to cook your tagine. Simmer for approximately 2h-2h30, checking every 45 minutes after the 1h30 mark for doneness. Alternatively, the Tagine can be placed in the oven for hands-off cooking.
STEP 5: SERVE!
Allow your tagine to cool before serving your meal tableside directly from the base of the dish. Serve alongside couscous for a complete meal. Tagines are traditionally made to share so be sure to enjoy with friends and family!
