Black and White Tiramisu

Like the quiet balance you find across the cosmos, this black and white tiramisu is built on contrast: deep, bittersweet layers against a cloud of mascarpone. A one-bowl sponge carries a gentle coffee soak without losing its structure while the long, shallow shape of the Star Trek Collection Galileo Shuttlecraft Rectangular Casserole encourages wide, generous layering. Finished with finely grated dark chocolate, it feels familiar yet just a touch otherworldly.
INSTRUCTIONS
For the black cocoa sponge cake, preheat oven to 350°F. Line a 9x13” sheet pan with parchment paper.
In the bowl of a stand mixer fitted with the whisk attachment, combine eggs, sugar, and vanilla extract. Mix on high speed for 3 to 5 minutes until pale and thick. If whisking by hand, whisk for 5 to 6 minutes until the mixture is light and falls from the whisk like thick pancake batter.
In a separate bowl, stir together flour, cocoa powders, salt, and baking powder. Gently sprinkle half of the dry mixture over the egg mixture and fold until smooth. Repeat with the remaining dry ingredients, folding gently until fully incorporated. Fold in the melted butter until smooth.
Transfer the batter to the prepared sheet pan and bake for 12 to 14 minutes, or until the cake is just set. Let cool completely, then invert onto a flat surface and cut into shapes to fit the width of your container.
For the coffee soak, whisk the cocoa powder and sugar into the hot coffee until dissolved. Let cool, then stir in the amaro.
While the coffee mixture cools, prepare the mascarpone cream. In a double boiler, whisk egg yolks and sugar until pale and slightly thickened. Remove from the heat and let cool for 5 minutes. Whisk in mascarpone, vanilla, and salt until smooth.
Using a stand mixer or whisk, whip the heavy cream until soft to medium peaks form. Gently fold the whipped cream into the mascarpone mixture until smooth and fully combined.
To assemble, place the first layer of black cocoa sponge cake in the bottom of the Star Trek Collection Galileo Shuttlecraft Rectangular Casserole. Drizzle with half of the coffee soak. Pipe or spoon over half of the mascarpone cream. Using the Star Trek Collection Communi-Grater shave a generous amount of dark chocolate over the top.
Repeat with a second layer of black cocoa sponge cake. Drizzle with the remaining coffee soak and top with the remaining mascarpone cream. Finish with another generous shaving of dark chocolate.
Cover and refrigerate for at least 6 hours before serving.
