INSTRUCTIONS
Preheat the oven to 425°F (220°C).
In a small bowl, whisk together all of the dressing ingredients. Season with salt and pepper to taste.
Place the feta in the square casserole. Arrange the onion wedges, lemon wedges and olives around the feta. Drizzle with the dressing.
Bake for 15 to 20 minutes or until hot and the onions are tender. In the last 5 minutes of cooking, add the fresh herbs.
Remove from the oven and cover with the lid. Let sit for 5 minutes before serving.
Just before serving, sprinkle with the pine nuts (if using) and serve with toasted bread on the side.
