INSTRUCTIONS
Cauliflower:
Preheat oven to 350ºF (175 °C). Pull all the leaves off of the cauliflower and use a paring knife to remove a bit of the core, keeping the head intact.
Place cauliflower cut side down into pan. Season with salt, pour water in the bottom of the pan and cover with foil.
Bake for 45 mins- 1 hour, until a skewer pokes into it very easily. Cut into wedges to serve.
Cheese Sauce:
In saucepan, melt butter over medium heat; whisk in flour and cook, stirring, for 1 minute.
Gradually whisk in milk and cook, whisking constantly, until thickened, about 5-7 mins. Remove from heat.
Stir in cheese, salt, pepper, and mustard until cheese is melted.
Drizzle over cauliflower and garnish with smoked paprika.
