Handy tips for cooking your turkey without a rack.
Although convenient for keeping meat elevated during cooking; many chefs prefer creating a natural rack using coarsely chopped vegetables. These vegetables will impart deep flavors in both the meat and pan sauce.
Make your own roasting rack by cutting carrots, celery, and onions into 1 - 1 ½” pieces. Line the bottom of your roasting pan with the vegetables to 1 ½ - 2" deep. Place the turkey on top of the vegetables.
